Dealing with self doubt
With so many great artists out there, one can become easily discouraged. Having dealt with this firsthand (especially in art school surrounded with many amazing teachers & students whom all wanted the same work I did) keeping the following ideas in mind can help termendously.
Your works are like your children:

-Maybe your kids won't grow up to be rich & famous but that's no reason not to be proud of them.

-When negative things are said about our "kids" it's very easy to take it personally (understandable since they are an extension of ourselves). Realize that at some point they'll have to fend for themselves. If someone doesn't like your work it doesn't mean they don't like you.
When judging your own work:

-You must be (this is tough) your own biggest fan & toughest critic at the same time. If you don't love your own work you'll stop doing it. However, if you love it TOO much you'll find less room for improvement.

-The best way to critique your own work is to look at it pretending it was done by a complete stranger and you're a teacher who must grade it. Be harsh but fair. Looking at it through the eyes of a stranger will make mistakes show up a little clearer.
And if all else fails just remember that if making great art was TOO easy it wouldn't be worth it!
